This month my menu planning is only for three weeks because my family is trying something new with menu planning and grocery shopping.

Of course for me, these are date specific, but you can apply this meal plan to any month or week you want!

I have linked any that I have recipes for online so you can find them too! If it is a recipe I have made before and we love in our family, then it will be marked with (T&T) for Tried and True. It is’s new that we’re trying out, it will be marked with (New).

Simple Scones

I love scones, always have. I am a big fan of carbs and I mean BIG! So when you give me a really puffy and lightly sweet pastry I am in heaven! Very little tastes as good with a black cup of coffee as a scone does.

So a few years back I decided I would attempt to make my own. I don’t know why, but for some reason I thought scones would be really hard to make. They seem fancy to me so I figured that meant they would be a very involved dish to recreate. I set out to find a really simple scone recipe that I could tweak or change out the add-in.

Enter my simple scones.

So incredibly easy, so incredibly delicious and the best part is that you can add in anything you want. Blueberries, cinnamon sugar, cranberry, orange zest, strawberry, raspberry. The sky’s the limit!


| What You Need |

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

6 tablespoons sugar

1/2 cup butter

1 large egg

1/2 tablespoon vanilla

1/2 tablespoon almond extract

1/2 cup heavy cream

1 cup your choice of add-in (blueberries pictured)

1 egg

1 tablespoon heavy cream

sugar (large crystal is best)


| What You Do |

Preheat oven to 375 degrees.

Batter:  Cut the butter into small cubes. Cut the butter into the flour with a pastry cutter. Add baking powder, salt and sugar to the butter and flour mixture. Whisk the egg, cream and vanilla together and stir into the dry ingredients until just mixed. Gently stir in topping choice with a wooden spoon. Dump the dough onto a floured surface and pat into a 8″ circle. (should be about 1.5″ high)  Cut into 8 pie shaped slices and place pieces on a parchment paper covered cookie sheet.

Topping:  Whisk the egg and cream together and brush on the top of each scone. Sprinkle sugar on top. Bake for 16-20 minutes, or until golden brown.


Honey Garlic Chicken and Veggies

I love to cook, I began learning in high school and it has always been something I enjoy doing. When I began cooking I would follow a recipe exactly, measuring precisely the whole way through. Then, as I had made more and more dishes I learned to eyeball and to even make up some of my own masterpieces!

I’ve had some total flops in my experimenting and I have had some real winners. Recently I concocted a real winner and I wanted to document it and share it with all of you!


| What You Need |

1 pound chicken breast – seasoned, grilled and cubed (salt and pepper is fine, or any other seasoning you like)

1 large sweet potato cubed

1 head of broccoli chopped

Honey Garlic Sauce:

  • 1/2 cup chicken broth
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, crushed
  • 2 tablespoons hot water
  • 1/2 tablespoon corn starch


| What You Do |

Steam broccoli and sweet potatoes until tender – set aside | To steam, I place veggies in a microwave safe dish, add 1/4 cup water, cover with saran wrap and microwave for 3.5 minutes. 

To make the honey garlic sauce | 

In a medium sauce pan combine all of the ingredients except the hot water and corn starch and bring to a gentle boil.

Reduce the heat and let simmer for 5 minutes. Stir often to prevent sticking to the pot.

After 5 minutes, in a separate bowl, combine the hot water and corn starch to make a slurry (learned that word from Pioneer Woman!). Once well combined, add to the other ingredients. Stir well.

Give it a couple minutes to thicken. Repeat if it’s still not thick enough for you.


Now, add the chicken to the veggies and pour the sauce over the mixture. I do not like things drenched in sauce so I spooned a small amount over the chicken and veggies and refrigerated the rest.

This recipe made enough for 4 big servings.




Taco Chili

A delicious and super easy recipe!

Try it, you’ll like it!

What you need:
1lb browned ground beef
1 onion diced
1 can corn
1 can black beans
1 can diced tomatoes
1 packet ranch seasoning
1 packet taco seasoning
1 1/2 cups beef broth
Brown meat and add onions, drain. Add all other ingredients and mix together. Either simmer 2 hours on stovetop or crock pot on low 6-8 hours. 
Add cheese and sour cream when served.

Creamy Chicken and Noodles

Another winter storm hit Missouri on Sunday and I was confined to the house with a puppy who needed out in the blizzard every 30 minutes to pee! Not so fun! But, I did get some things done and even got some relaxation time.

Something about the snow and the cold just makes me want to cook. Not just anything, but rich, hearty (as The Hubs calls it) comfort foods! So on Sunday evening I got on Pinterest (because where else do you find inspiration these days?) and found a recipe for Creamy Chicken and Noodles that fit the bill! It was delicious and made enough to freeze half and still have some left over for the fridge (those are the BEST kind of meals!)

I added frozen corn and green onions to the recipe and I used egg noodles instead of fettucini.

Breakfast Braid

I woke up early Saturday morning and really felt like cooking up something special for breakfast. By special I mean something other than a cereal bar or pop tart! So I looked on my Pinterest boards and found something I had been wanting to make for a while!

It was very simple, quick and delicious! 
Here is a shot of what you will need. 

1 container of crescent roll dough

real bacon bits

4 eggs

1 tbsp milk

salt and pepper, to taste

2-3 tbsp shredded cheese

1 tbsp green onion, sliced

Preheat oven to 375 degrees.
Knead crescent rolls together into a ball and let sit for 15 minutes.
Start by scrambling 4 eggs,1 tablespoon of milk, and salt and pepper until just done and fluffy. 
When eggs are done, set aside and roll out crescent dough into a rectangle shape. 
Sprinkle half the cheese, some bacon and green onion on rolled out dough.
Add eggs, then top with remaining cheese, onion and bacon bits. 
Make even cuts on extra side dough and “braid”.
Place in oven for 13-15 minutes. 
When done, let set out for 3 minutes before cutting and serving!
Eat and enjoy!

Broccoli and Cheese Twice Baked Potatoes

Made this recipe a while back for a Saturday lunch and never got around to posting it. It was very easy to make and tasted great! They were still great as leftovers and I was also able to freeze some that we ate a few weeks later.

I took a picture of the ones I made but 1. I lost it and 2. It was not this fancy.

Easy Homemade Granola

What you need:

6 cups quick-cooking oats
1 cup almonds or preferred nut, chopped (I used pecans)
1 1/2 cups brown sugar
1/3 cup water
1/2 cup vegetable oil
1/4 cup maple or pancake syrup
1 teaspoon vanilla extract
2 teaspoons cinnamon

What you do:

  1. Preheat oven to 300 degrees F. Lightly grease a 9×13-inch baking pan 
  2. Mix together oats and nuts in large bowl.
  3. Heat brown sugar and water until it just begins to boil. Turn off heat, then stir in oil, syrup, vanilla, and cinnamon. Pour over oats mixture and stir until all of the oats are evenly coated. Pat oats evenly into bottom of pan so that the layer is no more than two inches thick. 
  4. Bake in preheated oven for 40-50 minutes (stirring every 15 minutes), or until toasted and a dark golden brown. Remove from oven and allow to cool completely in pan before crumbling. Store in an airtight container.

Pinterest Recipes

I have been on a cooking spree lately and have tried quite a few new recipes from Pinterest! What I mean by a spree is that I have loved every single one I have made! Wanted to share them so others can make and eat these delicious meals!

Grilled Cheeseburger Wraps
These were so incredibly easy and delicious! It was also a healthy recipe which is always a bonus!

Spicy Sausage Pasta
This is probably my favorite of all the new recipes I have tried. Easy after all the prep is done (lots of chopping involved). I love that it uses sausage, which is a meat I don’t cook with often. Really adds some variety to my cache of recipes! 
Broccoli & Cheese Twice Baked Potatoes
These were also easy and delicious! I baked my potatoes the first time in the oven so that took an hour but you can do it in the microwave if you don’t have the time. 
These are copycat Starbucks scones and they are delicious! I was surprised by how easy they were and that I had every ingredient. They also taste exactly like the ones at Starbucks! I made one batch blueberry and one chocolate chip!
