Simple Baked Beef Burritos

I was craving some Mexican food the other night, and cravings always create the best best meals for me! I pulled together these baked burritos in no time, and they were a hit with everyone in our house!

So simple, and so tasty!

 

|What You Need|

1lb ground beef

1/2 yellow onion diced

1 can refried beans or black beans (or both if you’re feeling wild)

1 cup salsa

1 tbsp dry ranch seasoning

2 tbsp taco seasoning

shredded cheese

tortillas

 

|What You Do|

Preheat oven to 400 degrees. Spread a little olive oil in a baking dish.

Brown your beef with your diced onions in a little olive oil until nice and crispy. Drain off any grease.

Add in your beans, salsa, and seasonings. Mix until everything is warm and combined.

Place a good amount of meat mixture on a tortilla, and sprinkle with shredded cheese.

Roll tortillas and place seem-side down in baking dish.

Continue until all filling is used. Drizzle burritos with olive oil (this will help them get real crispy in the oven).

Bake for 20 minutes in a 400 degree oven.

Top with your favorite things! We love queso, sour cream, and salsa!
