Baby Rice Cereal Pancakes

Nora is really beginning to get good at feeding herself and loves when she gets some finger foods instead of purees. I have been scouring the internet for some good finger food ideas and ran into the concept of baby rice cereal pancakes. There are countless recipes for these on Pinterest so I whipped up my on with what I had on hand.

| What You Need |

1 cup whole wheat flour

1 cup rice cereal (I used banana apple flavor)

3 eggs

1/2 cup applesauce

1 1/2 cups water (you may add more or less for desired consistency)

 

| What You Do |

Mix together all ingredients until they are thoroughly  combined. Mixture will be lumpy because of rice cereal.

Drop onto greased griddle in small portions. Let cook through, they don’t bubble up like normal pancakes so you have to check frequently. Flip when underside is done.

Done! It’s that simple! I put mine in the freezer and microwave them in the mornings for Little Bit!
